  • 4 cups (1 liter) low sodium chicken broth
  • 1 can (14.5 ounces or 400 grams) diced tomatoes
  • 1 pound (450 grams) pasta of choice
  • ½ cup (135 grams) Buffalo hot sauce
  • 8 ounces (225 grams) cream cheese, cubed and softened
  • 9 ounces (255 grams) shredded cheddar cheese (about 2 cups)
  • 6 ounces (170 grams) shredded mozzarella cheese (about 1 ½ cups)
  • Ranch or blue cheese dressing for serving
  • Crumbled blue cheese or feta for serving

Instructions

  1. In a large skillet or pot, heat olive oil over medium heat.
  2. Add diced onion and celery, cooking until soft, about 4-5 minutes.
  3. Add minced garlic and sauté for an additional minute.
  4. Add shredded or diced chicken, kosher salt, and black pepper, stirring to combine.
  5. Pour in chicken broth and diced tomatoes (including juice), bringing to a gentle simmer for 5 minutes.
  6. Cook pasta according to package instructions until al dente; drain, reserving 1 cup of pasta water.
  7. Reduce heat to low, stir in Buffalo hot sauce and cream cheese, mixing until creamy.
  8. Add cooked pasta to skillet, tossing to coat in the sauce.
  9. Fold in shredded cheddar and mozzarella cheeses until melted.
  10. Serve hot, drizzled with ranch or blue cheese dressing and topped with crumbled blue cheese or feta.

Notes

Using rotisserie chicken saves time. Adjust Buffalo sauce for heat preference. Stir continuously when adding cream cheese to avoid lumps.
