- 1 tablespoon olive oil
- 1 pound bulk Italian sausage, crumbled
- ½ teaspoon Italian seasoning
- 1 medium yellow onion, diced
- 2 medium carrots, peeled and diced
- 1 stalk celery, diced
- 1 small head green cabbage, core removed and diced (about 1.5 to 2 pounds)
- 3 cloves garlic, minced
- 6 cups low-sodium chicken stock or broth
- 1 (28-ounce) can diced tomatoes
- 1 bay leaf
- Salt & pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add crumbled Italian sausage and cook until browned, about 5-7 minutes.
- Add diced onion, carrots, and celery; cook for another 5-7 minutes until softened.
- Stir in the diced cabbage and cook for 3-4 minutes until slightly wilted.
- Add minced garlic and Italian seasoning; sauté for 1 minute.
- Pour in chicken stock and diced tomatoes with juices.
- Add bay leaf, season with salt and pepper, and bring to a boil.
- Reduce heat and let simmer for 30-40 minutes.
- Adjust seasoning if needed, remove bay leaf, and serve warm.
Notes
For extra flavor, add a splash of apple cider vinegar or lemon juice before serving. For a spicy kick, include red pepper flakes. To make it vegetarian, substitute sausage with plant-based alternatives or beans.
