Ingredients

  • 1 tablespoon olive oil
  • 1 pound bulk Italian sausage, crumbled
  • ½ teaspoon Italian seasoning
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 1 stalk celery, diced
  • 1 small head green cabbage, core removed and diced (about 1.5 to 2 pounds)
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken stock or broth
  • 1 (28-ounce) can diced tomatoes
  • 1 bay leaf
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add crumbled Italian sausage and cook until browned, about 5-7 minutes.
  3. Add diced onion, carrots, and celery; cook for another 5-7 minutes until softened.
  4. Stir in the diced cabbage and cook for 3-4 minutes until slightly wilted.
  5. Add minced garlic and Italian seasoning; sauté for 1 minute.
  6. Pour in chicken stock and diced tomatoes with juices.
  7. Add bay leaf, season with salt and pepper, and bring to a boil.
  8. Reduce heat and let simmer for 30-40 minutes.
  9. Adjust seasoning if needed, remove bay leaf, and serve warm.

Notes

For extra flavor, add a splash of apple cider vinegar or lemon juice before serving. For a spicy kick, include red pepper flakes. To make it vegetarian, substitute sausage with plant-based alternatives or beans.
