- 1 (15.25-ounce) box cake mix (any flavor)
- 1/2 scant cup vegetable oil or 7 tablespoons melted butter
- 2 large eggs
- Optional mix-ins: Chocolate chips, M&Ms, Rolos, nuts, sprinkles, etc.
Instructions
- Preheat the oven to 350°F. Line a baking sheet with a silicone mat or parchment paper.
- In a large bowl, combine the cake mix, oil, and eggs. Mix until smooth. If desired, refrigerate the dough for 15-20 minutes to make it easier to handle.
- Using a medium scoop or spoon, portion the dough onto the prepared baking sheet. Add any mix-ins to the tops of the cookies, if desired.
- Bake for 9-11 minutes, or until the cookies are set. Avoid browning the cookies to keep them soft.
- Let the cookies cool on the baking sheet for 2-3 minutes before transferring them to a cooling rack. Store in an airtight container for up to 3 days.
Notes
For variations, use any cake mix flavor and mix-ins like white chocolate chips, sprinkles, or Rolos. To freeze, flash-freeze cookies for 30 minutes, then transfer to a freezer bag for up to 3 months. Thaw at room temperature before enjoying.
