Description

Ingredients

  • 3 large chicken breasts, boneless and skinless, sliced lengthwise into thin cutlets
  • 1 teaspoon dried oregano
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ¼ cup chicken stock or water or apple cider vinegar
  • ⅓ cup balsamic vinegar
  • 1 ½ cups cherry tomatoes, sliced in half
  • 6 slices mozzarella
  • 12 large whole tomatoes, sliced
  • Fresh basil, for garnish
  • Balsamic glaze for serving (optional)

Instructions

  1. Slice the chicken breasts lengthwise into thin cutlets and ensure they are uniform in thickness.
  2. Season both sides of each cutlet with dried oregano, black pepper, and salt.
  3. Heat olive oil in a large skillet over medium-high heat, then sear the chicken for 3-4 minutes per side until golden brown and cooked through. Set aside.
  4. Reduce heat to medium, add minced garlic, and sauté for about 30 seconds.
  5. Deglaze the pan with chicken stock, scraping up any browned bits for extra flavor.
  6. Add balsamic vinegar and half of the sliced cherry tomatoes. Let simmer for 2-3 minutes.
  7. Return chicken to the skillet. Top each cutlet with mozzarella, sliced whole tomatoes, and remaining cherry tomatoes.
  8. Cover and cook for 2-3 minutes until the cheese melts.
  9. Garnish with fresh basil and drizzle with balsamic glaze if desired. Serve hot.

Notes

For the juiciest chicken, brine it in a saltwater mixture for 30 minutes before cooking. Use heirloom tomatoes or burrata for a richer flavor. Serve with crusty bread or a simple green salad for a complete meal.
