- 3 large chicken breasts, boneless and skinless, sliced lengthwise into thin cutlets
- 1 teaspoon dried oregano
- ½ teaspoon ground black pepper
- 1 teaspoon salt
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- ¼ cup chicken stock or water or apple cider vinegar
- ⅓ cup balsamic vinegar
- 1 ½ cups cherry tomatoes, sliced in half
- 6 slices mozzarella
- 1–2 large whole tomatoes, sliced
- Fresh basil, for garnish
- Balsamic glaze for serving (optional)
Instructions
- Slice the chicken breasts lengthwise into thin cutlets and ensure they are uniform in thickness.
- Season both sides of each cutlet with dried oregano, black pepper, and salt.
- Heat olive oil in a large skillet over medium-high heat, then sear the chicken for 3-4 minutes per side until golden brown and cooked through. Set aside.
- Reduce heat to medium, add minced garlic, and sauté for about 30 seconds.
- Deglaze the pan with chicken stock, scraping up any browned bits for extra flavor.
- Add balsamic vinegar and half of the sliced cherry tomatoes. Let simmer for 2-3 minutes.
- Return chicken to the skillet. Top each cutlet with mozzarella, sliced whole tomatoes, and remaining cherry tomatoes.
- Cover and cook for 2-3 minutes until the cheese melts.
- Garnish with fresh basil and drizzle with balsamic glaze if desired. Serve hot.
Notes
For the juiciest chicken, brine it in a saltwater mixture for 30 minutes before cooking. Use heirloom tomatoes or burrata for a richer flavor. Serve with crusty bread or a simple green salad for a complete meal.
