Description
Super soft and gooey cookie dough bars, loaded with chocolate chips and a sprinkle of sea salt.
Ingredients

- 225g unsalted butter, softened
- 150g light brown sugar
- 75g granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 270g plain flour
- 1 tsp bicarbonate of soda
- 1 tsp salt
- 350g semi-sweet chocolate chips
- 50g semi-sweet chocolate chips for topping
- Sprinkle of sea salt
Instructions
- Preheat the oven to 180°C/160°C (fan) and line an 8×10” baking tray with parchment paper.
- Cream together the softened butter and both sugars with an electric hand whisk or stand mixer until light and fluffy.
- Add the eggs and vanilla extract, then mix until combined.
- Fold in the plain flour, bicarbonate of soda, and salt with a wooden spoon or rubber spatula until just combined.
- Stir in the chocolate chips until evenly distributed.
- Transfer the dough into the prepared baking tray and spread evenly.
- Press the remaining chocolate chips into the top of the dough.
- Bake for 20-25 minutes, until the edges are golden and the center has a slight wobble.
- Sprinkle with sea salt while still warm (optional but recommended).
- Allow to cool completely in the tin before slicing.
Notes
For a clean-cut appearance, allow the bars to cool fully in the tin or refrigerate before slicing. Store at room temperature or in the fridge for up to 4-5 days. Reheat for a warm and gooey texture. Do not use a tin smaller than 8×10” to ensure even baking.
