- 2 tablespoons (30 ml) olive oil or sundried tomato oil
- 1 pound (450 grams) chicken breast, cut into ¾ – 1 inch pieces
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tablespoons (26 grams) butter
- 2 cloves garlic, minced
- 1 cup (240 ml) chicken stock
- 1 cup (240 ml) heavy cream
- 16 ounces (450 grams) gnocchi
- 1 teaspoon smoked paprika
- ⅓ cup sundried tomatoes, chopped
- ½ cup grated parmesan cheese
- 2 cups baby spinach leaves
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken, season with Italian seasoning, salt, and black pepper. Cook until golden and cooked through, about 5-7 minutes. Remove and set aside.
- Melt butter in the skillet, add minced garlic, and sauté for 30 seconds.
- Pour in chicken stock, scrape up any browned bits, and let it simmer for a minute.
- Reduce heat, add heavy cream, and let simmer until slightly thickened.
- In a separate pot, cook gnocchi according to package instructions, drain, and set aside.
- Return cooked chicken to the skillet, adding smoked paprika, sundried tomatoes, and spinach. Stir until spinach is wilted.
- Add gnocchi, gently toss to coat, and mix in parmesan cheese.
- Serve warm, garnished with additional parmesan if desired.
Notes
For extra flavor, add crushed red pepper flakes or swap spinach for kale. Use coconut cream for a dairy-free alternative.
