- 1 1/2 pounds boneless skinless chicken, cut into 1-inch pieces
- 10 ounces penne pasta
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 3 tablespoons butter
- 2 teaspoons garlic, minced
- 3 tablespoons flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup parmesan cheese, grated
- 1 cup sun-dried tomatoes, drained
- 1 teaspoon paprika
- 2 teaspoons dried Italian seasoning
- Fresh basil for garnish
Instructions
- Bring a pot of salted water to a boil and cook the penne pasta according to the package instructions. Drain and set aside.
- Cut the chicken into bite-sized pieces, then season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and fully cooked, about 6-8 minutes. Remove the chicken and set aside.
- In the same skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Sprinkle in the flour and whisk continuously to create a smooth paste (roux).
- Gradually add chicken broth while whisking to prevent lumps, then pour in the heavy cream and continue whisking until smooth.
- Stir in grated parmesan cheese, followed by the sun-dried tomatoes, paprika, and Italian seasoning. Allow the sauce to simmer for 2-3 minutes to thicken.
- Return the cooked chicken to the skillet, then add the drained pasta. Toss everything together to coat evenly in the creamy sauce.
- Garnish with fresh basil and additional parmesan cheese before serving.
Notes
For a spicier kick, sprinkle red pepper flakes into the sauce. Freshly grated parmesan enhances the flavor. Store leftovers in the refrigerator for up to 4 days.
