- 2–3 chicken breasts, boneless and skinless, sliced lengthwise into cutlets
- Salt and pepper, to taste
- 1 tablespoon (15 ml) olive oil (not extra virgin)
- 2 tablespoons (28 g) unsalted butter
- 3 cloves garlic, minced or crushed
- 8 ounces (225 g) cream cheese, softened
- 1 teaspoon Dijon mustard
- 1 teaspoon Italian seasoning
- 1 cup (240 ml) chicken stock
- ½ cup (43 g) shredded Parmesan cheese
- ¼ teaspoon red pepper flakes (optional)
- 1 teaspoon fresh chopped parsley (optional, for garnish)
Instructions
- Slice chicken breasts lengthwise into cutlets and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat and sear chicken for 3-4 minutes per side until golden brown. Remove and set aside.
- Reduce heat to medium, add butter, and sauté minced garlic for 30 seconds until fragrant.
- Add softened cream cheese and stir until smooth.
- Stir in Dijon mustard and Italian seasoning.
- Slowly add chicken stock, stirring until well combined and creamy.
- Return chicken to the skillet, let it simmer for 5 minutes.
- Sprinkle shredded Parmesan cheese and mix until melted.
- Garnish with chopped parsley and serve over pasta, rice, or vegetables.
Notes
For a lighter version, substitute cream cheese with Greek yogurt. Add vegetables like spinach or mushrooms for extra nutrition.
