Description
A quick and flavorful one-pan meal with tender steak bites and crispy golden potatoes, tossed in a rich garlic butter sauce.

- 1/4 cup ghee or butter, divided
- 1 tablespoon olive oil
- 1 lb Yukon gold potatoes, cut into 1/2-inch cubes
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon sea salt, plus more to taste
- 1/4 teaspoon ground black pepper, plus more to taste
- 1 1/4 lb sirloin steak, cut into 1/2-inch cubes
- Fresh parsley, chopped (for garnish)
Instructions
- Heat a large cast iron skillet over medium heat. Add the olive oil and 2 tablespoons of ghee to the pan.
- Once the ghee is melted, add the potatoes and sprinkle with garlic, thyme, oregano, salt, and pepper. Cook for 2-3 minutes before stirring. Continue to stir every 1-2 minutes and cook until the potatoes are golden brown and fork-tender, about 8-10 minutes. Remove the potatoes and set aside.
- Increase the heat to medium-high and add the remaining 2 tablespoons of ghee to the skillet. Once melted, add the steak cubes and season with a dash of salt and pepper.
- Cook the steak for at least 2 minutes without stirring to get a good sear. Stir and cook for an additional 1-2 minutes until golden brown.
- Add the cooked potatoes back to the pan and stir to combine. Taste and adjust the seasoning with more salt and pepper if needed.
- Top with freshly chopped parsley and serve immediately.
Notes
For best results, use a cast iron skillet to achieve crispy potatoes and a golden sear on the steak. Smaller, evenly cut potatoes will cook faster and more evenly. Leftovers can be reheated in a skillet over medium heat with a little extra ghee or butter.
