Description
A comforting and hearty one-pan casserole made with layers of seasoned ground beef, potatoes, creamy soups, and melted cheese, topped with crispy fried onions.
Ingredients
Scale
- 1 pound lean ground beef
- Salt and pepper to taste
- 4 medium yellow potatoes, peeled and sliced
- 8 ounces Colby Jack cheese, freshly grated
- 10-ounce can cream of chicken soup
- 10-ounce can cream of celery soup
- 1/3 cup milk
- 1/2 teaspoon all-purpose seasoning
- 1/2 teaspoon Worcestershire sauce
- 1/2 cup French’s fried onions
Instructions
- Preheat the oven to 350°F.
- Lightly grease a 10-inch cast iron skillet. Add the ground beef, break it up, and spread it into an even layer. Season with salt and pepper.
- Layer the sliced potatoes evenly over the ground beef.
- Sprinkle the grated cheese over the potatoes.
- In a large mixing bowl, combine the cream of chicken soup, cream of celery soup, milk, all-purpose seasoning, and Worcestershire sauce. Whisk until smooth.
- Spoon the soup mixture over the cheese layer and spread it evenly with the back of a spoon.
- Cover the skillet tightly with aluminum foil. Place it in the oven and bake for 90 minutes.
- Remove the skillet from the oven, take off the foil, and sprinkle the fried onions evenly over the top.
- Place the skillet under a hot broiler for 2-3 minutes until the onions are golden brown and crispy.
- Garnish with chopped parsley or green onions if desired, and serve warm.
Notes
For best results, shred your own cheese for better melting. Use heavy-duty foil to cover the skillet to retain moisture while baking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
