Description

Ingredients

  • 8 chicken thighs (skinless and boneless)
  • 2 tbsp cornflour (cornstarch)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 110 g (1/3 cup) honey
  • 80 ml (1/3 cup) chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • 1 tbsp fresh parsley, finely chopped
  • 1/2 tsp chili flakes
  • Boiled rice for serving

Instructions

  1. Place the chicken thighs in a bowl and add the cornflour, salt, and pepper. Toss the chicken to coat evenly.
  2. Heat the vegetable oil in a large frying pan over high heat. Add the chicken thighs and cook for 4-5 minutes on one side until golden brown, then flip and cook for another 2 minutes.
  3. Reduce the heat to medium and add the butter to the pan. Let it melt, then add the minced garlic. Stir and cook for 30 seconds until fragrant.
  4. In a small bowl, combine the honey, chicken stock, rice vinegar, and soy sauce. Stir until well mixed.
  5. Pour the sauce into the pan with the chicken. Increase the heat to bring the mixture to a boil, then reduce to a simmer. Cook for 4-5 minutes, allowing the sauce to thicken and the chicken to cook through.
  6. Sprinkle the chicken with chopped parsley and chili flakes. Serve hot over boiled rice.

Notes

Chicken breasts can be substituted for thighs; slice them into strips for even cooking. For a gluten-free option, replace soy sauce with tamari and ensure all other ingredients are gluten-free. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
