Description
Sticky, tender chicken thighs coated in a flavorful garlic, soy, and honey sauce. A quick and easy dinner perfect for any night of the week.
Ingredients
Scale
- 8 chicken thighs (skinless and boneless)
- 2 tbsp cornflour (cornstarch)
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp vegetable oil
- 1 tbsp unsalted butter
- 4 cloves garlic, minced
- 110 g (1/3 cup) honey
- 80 ml (1/3 cup) chicken stock
- 1 tbsp rice vinegar
- 1 tbsp light soy sauce
- 1 tbsp fresh parsley, finely chopped
- 1/2 tsp chili flakes
- Boiled rice for serving
Instructions
- Place the chicken thighs in a bowl and add the cornflour, salt, and pepper. Toss the chicken to coat evenly.
- Heat the vegetable oil in a large frying pan over high heat. Add the chicken thighs and cook for 4-5 minutes on one side until golden brown, then flip and cook for another 2 minutes.
- Reduce the heat to medium and add the butter to the pan. Let it melt, then add the minced garlic. Stir and cook for 30 seconds until fragrant.
- In a small bowl, combine the honey, chicken stock, rice vinegar, and soy sauce. Stir until well mixed.
- Pour the sauce into the pan with the chicken. Increase the heat to bring the mixture to a boil, then reduce to a simmer. Cook for 4-5 minutes, allowing the sauce to thicken and the chicken to cook through.
- Sprinkle the chicken with chopped parsley and chili flakes. Serve hot over boiled rice.
Notes
Chicken breasts can be substituted for thighs; slice them into strips for even cooking. For a gluten-free option, replace soy sauce with tamari and ensure all other ingredients are gluten-free. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
