Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound (450 grams) ground beef (90% lean)
  • 1 medium yellow onion, finely diced
  • 1 red or green bell pepper, seeded and diced
  • 1 jalapeno, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 cup (240 ml) beef broth
  • 28 oz (800 grams) can diced tomatoes
  • 15 oz (400 grams) can kidney beans, drained and rinsed
  • 15 oz (400 grams) can pinto beans or Borlotti Beans, drained and rinsed
  • 15 oz (400 grams) can black beans, drained and rinsed
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  1. Turn Instant Pot to ‘Sauté’ mode and add olive oil.
  2. Add diced onion and bell pepper. Sauté for 3-4 minutes until onion is translucent.
  3. Add jalapeno and minced garlic. Cook for another minute until fragrant.
  4. Add ground beef, breaking it apart with a spatula. Cook until browned (5-7 minutes). Drain excess fat if needed.
  5. Stir in tomato paste, chili powder, cumin, oregano, and garlic powder. Cook for a minute to toast the spices.
  6. Pour in beef broth and diced tomatoes. Stir to combine.
  7. Gently fold in kidney beans, pinto beans, and black beans. Season with salt and pepper.
  8. Secure the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 15 minutes.
  9. Allow natural pressure release for 10 minutes, then manually release remaining pressure.
  10. Remove the lid, stir well, and adjust seasoning if needed.
  11. Serve hot with toppings like shredded cheese, sour cream, green onions, or avocado.

Notes

For a thicker chili, use 2 cans of beans instead of 3. Add Worcestershire sauce or hot sauce for extra flavor.
