Ingredients

  • 1 pound (450 g) ground breakfast sausage, cooked and drained
  • 8 ounces (225 g) turkey bacon, diced and cooked until crispy
  • ¾ cup small diced white onion
  • 1 cup small diced green bell pepper
  • 1 cup small diced red bell pepper
  • 4 cups crusty bread, cut into small cubes
  • 8 ounces (225 g) Velveeta cheese, diced into small pieces
  • 12 large eggs, well beaten
  • ⅔ cup (120 ml) half and half
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 2 cups (240 g) shredded sharp cheddar cheese

Instructions

  1. Cook the ground breakfast sausage in a large skillet over medium heat until browned. Drain excess grease and set aside.
  2. In the same skillet, cook the diced turkey bacon until crispy. Remove and place on a paper towel-lined plate.
  3. Sauté the diced onions, green bell peppers, and red bell peppers in the skillet until softened, about 5-7 minutes. Remove from heat.
  4. Grease a 9×13 inch baking dish with cooking spray or olive oil.
  5. In a large bowl, mix the cooked sausage, crispy bacon, sautéed vegetables, and cubed bread.
  6. Stir in the diced Velveeta cheese.
  7. In a separate bowl, whisk together the beaten eggs, half and half, salt, and black pepper.
  8. Pour the egg mixture over the bread and meat mixture in the baking dish, ensuring everything is well coated.
  9. Sprinkle shredded cheddar cheese over the top, cover with plastic wrap, and refrigerate overnight or for at least 4 hours.
  10. Preheat the oven to 350°F (175°C). Remove the casserole from the fridge and let it sit at room temperature for 20 minutes.
  11. Bake uncovered for 45-50 minutes until set in the center and golden brown.
  12. Let it cool slightly before serving. Enjoy!

Notes

For best results, use slightly dried bread to help absorb the egg mixture without becoming soggy. Add jalapeños for extra heat, or swap meats for a vegetarian version with more vegetables.
