Shrimp Scampi with Pasta

Description

A flavorful dish featuring succulent shrimp in a garlic-butter sauce, tossed with tender linguine and brightened with fresh lemon juice.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 12 oz linguine
  • 4 tbsp unsalted butter, divided
  • 4 tbsp extra-virgin olive oil, divided
  • 2 shallots, finely diced
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 1/4 cup apple cider vinegar or chicken stock
  • 2 tbsp fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • Kosher salt, to taste
  • Black pepper, to taste
  • 1 cup reserved pasta water

Instructions

  1. Peel and devein the shrimp, if not already done. Finely dice the shallots, mince the garlic, juice the lemon, and chop the parsley.
  2. Bring a large pot of salted water to a boil. Add linguine and cook until al dente, about 6–8 minutes. Reserve 1 cup of pasta water before draining.
  3. In a large skillet, melt 2 tablespoons of butter with 2 tablespoons of olive oil over medium heat. Add shallots, garlic, and red pepper flakes. Sauté until shallots are translucent, about 3–4 minutes.
  4. Season shrimp with salt and pepper, then add to the skillet. Cook for 2–3 minutes, turning occasionally, until shrimp are pink and opaque. Remove from skillet and set aside.
  5. Deglaze the skillet with apple cider vinegar or chicken stock, scraping up any browned bits. Add lemon juice and simmer for 1 minute. Stir in the remaining butter and olive oil until the sauce is glossy.
  6. Return shrimp to the skillet and add the cooked linguine and parsley. Toss to coat everything in the sauce. Add reserved pasta water, a splash at a time, to adjust the sauce consistency.
  7. Drizzle with additional olive oil if desired. Serve hot, garnished with more parsley.

Notes

Serve with crusty bread or a green salad. Adjust the spice level by increasing or reducing red pepper flakes.
