  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 tablespoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • Vegetable oil for frying

Instructions

  1. Combine flour, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper (if using) in a large resealable plastic bag.
  2. Add chicken pieces to the bag and shake until evenly coated. Place coated chicken on a wire rack over a baking sheet.
  3. Refrigerate floured chicken for 45 minutes to help the coating adhere.
  4. Heat vegetable oil in a deep fryer or heavy pot to 375°F (190°C). Ensure oil is at least 1.5 inches deep.
  5. Remove chicken from the fridge and dredge again in the flour mixture for an extra crispy crust.
  6. Carefully lower 2–3 pieces of chicken into the hot oil, frying in small batches. Cook for 8–12 minutes, turning once, until golden brown and the internal temperature reaches 165°F (74°C).
  7. Drain fried chicken on a wire rack or paper towel-lined plate. Keep warm in a 200°F (93°C) oven while frying remaining chicken.
  8. Serve hot, paired with classic Southern sides like mashed potatoes, coleslaw, or biscuits.

Notes

For best results, use a thermometer to monitor the oil temperature. Adjust spice levels in the flour mixture to taste.
