- 1 whole chicken, cut into pieces
- 2 cups all-purpose flour
- 1 tablespoon paprika
- 1 tablespoon kosher salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (optional)
- Vegetable oil for frying
Instructions
- Combine flour, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper (if using) in a large resealable plastic bag.
- Add chicken pieces to the bag and shake until evenly coated. Place coated chicken on a wire rack over a baking sheet.
- Refrigerate floured chicken for 45 minutes to help the coating adhere.
- Heat vegetable oil in a deep fryer or heavy pot to 375°F (190°C). Ensure oil is at least 1.5 inches deep.
- Remove chicken from the fridge and dredge again in the flour mixture for an extra crispy crust.
- Carefully lower 2–3 pieces of chicken into the hot oil, frying in small batches. Cook for 8–12 minutes, turning once, until golden brown and the internal temperature reaches 165°F (74°C).
- Drain fried chicken on a wire rack or paper towel-lined plate. Keep warm in a 200°F (93°C) oven while frying remaining chicken.
- Serve hot, paired with classic Southern sides like mashed potatoes, coleslaw, or biscuits.
Notes
For best results, use a thermometer to monitor the oil temperature. Adjust spice levels in the flour mixture to taste.
