- 2 ½ cups (300 g) all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ½ cup (112 g) unsalted butter, very cold and cubed
- ¾ cup (170 g) pumpkin puree
- ½ cup (100 g) light brown sugar
- 1 large egg
- ¼ cup (55 g) heavy cream, plus extra for brushing
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- Cut in the cold butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together pumpkin puree, brown sugar, egg, and heavy cream until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Turn dough onto a floured surface and pat into a 1-inch thick circle. Cut into 8 wedges.
- Place scones on a parchment-lined baking sheet and brush tops with extra heavy cream.
- Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
- Let cool slightly before serving.
Notes
For best results, keep the butter cold and avoid overmixing the dough to ensure flaky scones.
