Description

Ingredients

  • 2 ½ cups (300 g) all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ cup (112 g) unsalted butter, very cold and cubed
  • ¾ cup (170 g) pumpkin puree
  • ½ cup (100 g) light brown sugar
  • 1 large egg
  • ¼ cup (55 g) heavy cream, plus extra for brushing

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. Cut in the cold butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together pumpkin puree, brown sugar, egg, and heavy cream until smooth.
  5. Pour the wet mixture into the dry ingredients and stir until just combined.
  6. Turn dough onto a floured surface and pat into a 1-inch thick circle. Cut into 8 wedges.
  7. Place scones on a parchment-lined baking sheet and brush tops with extra heavy cream.
  8. Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
  9. Let cool slightly before serving.

Notes

For best results, keep the butter cold and avoid overmixing the dough to ensure flaky scones.
