Description

Delicious and wholesome strawberry oatmeal breakfast bars made with fresh strawberries and a buttery oat crust. Perfect for a quick breakfast or a light dessert.


Ingredients

  • 1 pound fresh strawberries
  • 1/2 lemon, juiced
  • 2 tablespoons white sugar
  • 2 teaspoons cornstarch
  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground ginger
  • 8 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C). Butter a 9×12-inch baking dish.
  2. Dice the strawberries into small, uniform pieces. Combine them in a mixing bowl with lemon juice, white sugar, and cornstarch. Stir until well combined and set aside.
  3. In another mixing bowl, combine oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ginger. Pour in melted butter and stir until the dry ingredients are evenly coated.
  4. Press 60% of the oat mixture into the prepared baking dish to form an even crust. Use the back of a spoon or spatula to compress it slightly.
  5. Spread the diced strawberry mixture over the crust using a slotted spoon, reserving any juices in the bowl. Do not press down on the strawberries.
  6. Sprinkle the remaining oat mixture evenly over the strawberries, pressing down lightly with a spoon or spatula. Drizzle the reserved strawberry juices over the top.
  7. Bake for 45 minutes, or until the top is golden brown. Remove from the oven and lightly press the top with a spatula to compress.
  8. Allow the bars to cool completely in the dish, about 1 hour. Cut into bars and serve.

Notes

These bars can be made in an 8×8-inch dish for thicker bars, but you may need to increase the baking time slightly. Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days. For a dessert twist, drizzle with icing or serve warm with ice cream.
