Description
Delicious and wholesome strawberry oatmeal breakfast bars made with fresh strawberries and a buttery oat crust. Perfect for a quick breakfast or a light dessert.

- 1 pound fresh strawberries
- 1/2 lemon, juiced
- 2 tablespoons white sugar
- 2 teaspoons cornstarch
- 1 1/2 cups old-fashioned rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup packed light brown sugar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground ginger
- 8 tablespoons unsalted butter, melted
Instructions
- Preheat the oven to 375°F (190°C). Butter a 9×12-inch baking dish.
- Dice the strawberries into small, uniform pieces. Combine them in a mixing bowl with lemon juice, white sugar, and cornstarch. Stir until well combined and set aside.
- In another mixing bowl, combine oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ginger. Pour in melted butter and stir until the dry ingredients are evenly coated.
- Press 60% of the oat mixture into the prepared baking dish to form an even crust. Use the back of a spoon or spatula to compress it slightly.
- Spread the diced strawberry mixture over the crust using a slotted spoon, reserving any juices in the bowl. Do not press down on the strawberries.
- Sprinkle the remaining oat mixture evenly over the strawberries, pressing down lightly with a spoon or spatula. Drizzle the reserved strawberry juices over the top.
- Bake for 45 minutes, or until the top is golden brown. Remove from the oven and lightly press the top with a spatula to compress.
- Allow the bars to cool completely in the dish, about 1 hour. Cut into bars and serve.
Notes
These bars can be made in an 8×8-inch dish for thicker bars, but you may need to increase the baking time slightly. Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days. For a dessert twist, drizzle with icing or serve warm with ice cream.
