- 3/4 cup superfine sugar
- 2/3 cup butter, softened
- 3 large eggs
- 1 1/2 cups self-rising flour
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin or line the cups with paper liners.
- In a large bowl, beat the sugar and softened butter with an electric mixer until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract, then stir in the self-rising flour just until combined. Avoid overmixing.
- Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
- Bake in the preheated oven for 18–20 minutes, or until the cupcake tops spring back when lightly pressed.
- Cool the cupcakes in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For added flavor, top with your favorite frosting and sprinkles. Store in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
