Ingredients

Dried Pinto Beans

  • 1 pound dried pinto beans (approximately 2 cups)

Liquid

  • 4 cups vegetable stock or chicken stock or water

Aromatics

  • 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 1 jalapeño, sliced or diced

Spices

  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt

Instructions

  • Step 1: Prepare the Beans - Rinse the dried pinto beans in cold water, removing any debris or damaged beans. Soak the beans in water for a few hours or preferably overnight.
  • Step 2: Sauté Aromatics - In a skillet over medium heat, add olive oil. Once hot, add the diced yellow onion and jalapeño. Sauté for about 5 minutes until the onion is translucent, then add the minced garlic and sauté for an additional minute until fragrant.
  • Step 3: Add Ingredients to the Crock Pot - Transfer the sautéed mixture into your Crock Pot. Drain and transfer the soaked pinto beans into the pot. Pour in the stock and stir in the spices.
  • Step 4: Cook - Cover the Crock Pot and set it to cook on low for 6 to 8 hours, or on high for 4 to 5 hours. Check for doneness at the lower end of the time range.
  • Step 5: Adjust and Serve - Once cooked, taste the beans and adjust the seasoning if needed. Serve warm as a main dish or side.
