Instructions
Step 1: Prepare the Beans - Rinse the dried pinto beans in cold water, removing any debris or damaged beans. Soak the beans in water for a few hours or preferably overnight.
Step 2: Sauté Aromatics - In a skillet over medium heat, add olive oil. Once hot, add the diced yellow onion and jalapeño. Sauté for about 5 minutes until the onion is translucent, then add the minced garlic and sauté for an additional minute until fragrant.
Step 3: Add Ingredients to the Crock Pot - Transfer the sautéed mixture into your Crock Pot. Drain and transfer the soaked pinto beans into the pot. Pour in the stock and stir in the spices.
