- 1 teaspoon salt
- 1 cup (120 grams) cornstarch
- 1 large egg
- 1 cup (250 ml) buttermilk
- 1 tablespoon Tabasco hot sauce
- 2 cups (240 grams) all-purpose flour
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 teaspoons smoked paprika
- 1/4 teaspoon dried thyme
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon baking powder
- Oil for frying (vegetable, canola, or peanut oil)
Instructions
- Season the cube steaks with salt on both sides.
- In a bowl, whisk together buttermilk, egg, and hot sauce.
- In another bowl, mix flour, cornstarch, salt, black pepper, smoked paprika, thyme, garlic powder, onion powder, and baking powder.
- Dredge each steak in buttermilk mixture, then coat with the flour mixture, pressing firmly.
- Heat ½ inch oil in a skillet over medium-high heat until sizzling.
- Fry steaks for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.
- For the gravy, reduce heat and whisk ¼ cup flour into the drippings.
- Slowly add 2 to 2 ½ cups milk, whisking constantly. Simmer until thickened.
- Season with salt and pepper to taste.
- Serve steaks with gravy, mashed potatoes, and green beans.
Notes
For extra flavor, marinate the steaks in buttermilk overnight. Maintain oil temperature for even frying. Use a meat thermometer to ensure steaks reach 145°F (63°C).
