  • 1 teaspoon salt
  • 1 cup (120 grams) cornstarch
  • 1 large egg
  • 1 cup (250 ml) buttermilk
  • 1 tablespoon Tabasco hot sauce
  • 2 cups (240 grams) all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons smoked paprika
  • 1/4 teaspoon dried thyme
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon baking powder
  • Oil for frying (vegetable, canola, or peanut oil)

Instructions

  1. Season the cube steaks with salt on both sides.
  2. In a bowl, whisk together buttermilk, egg, and hot sauce.
  3. In another bowl, mix flour, cornstarch, salt, black pepper, smoked paprika, thyme, garlic powder, onion powder, and baking powder.
  4. Dredge each steak in buttermilk mixture, then coat with the flour mixture, pressing firmly.
  5. Heat ½ inch oil in a skillet over medium-high heat until sizzling.
  6. Fry steaks for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.
  7. For the gravy, reduce heat and whisk ¼ cup flour into the drippings.
  8. Slowly add 2 to 2 ½ cups milk, whisking constantly. Simmer until thickened.
  9. Season with salt and pepper to taste.
  10. Serve steaks with gravy, mashed potatoes, and green beans.

Notes

For extra flavor, marinate the steaks in buttermilk overnight. Maintain oil temperature for even frying. Use a meat thermometer to ensure steaks reach 145°F (63°C).
