Ingredients

  • 1 lb ground beef
  • 1/2 red bell pepper cut into matchsticks
  • 1 large carrot chopped
  • 1 medium zucchini chopped
  • 1 large crown broccoli chopped
  • 1/4 cup paleo teriyaki sauce
  • 1/2 tsp sea salt to taste

Instructions

  • Begin by heating your large skillet over medium-high heat. Once hot, add the ground beef. Break it apart with your spatula and cook for about 5-7 minutes, or until it is browned and fully cooked. Drain any excess fat if necessary.
  • Once the ground beef is cooked, add in the chopped carrot, red bell pepper, zucchini, and broccoli. Stir everything together, allowing the vegetables to cook and soften for about 5-7 minutes.
  • After the vegetables have softened, pour in the paleo teriyaki sauce and sprinkle with sea salt. Stir well to coat all the ingredients evenly with the sauce.
  • Allow the mixture to simmer for another 2-3 minutes, ensuring everything is heated through. Once ready, remove from heat and serve immediately.

Equipment

  • Large Skillet
  • Cutting Board
  • Sharp Knife
  • Spatula or wooden spoon
  • Measuring cups and spoons

Notes

  • Feel free to swap out vegetables based on what you have on hand.
  • For an extra kick, add a dash of red pepper flakes or a splash of sriracha.
  • If you prefer a thicker sauce, let it simmer for a few more minutes to reduce.
  • This dish can easily be doubled for meal prep or larger families.
