Ingredients

  • 8 oz whole wheat noodles
  • 2 tablespoons vegetable oil
  • 1 cup broccoli florets
  • 1 cup bell peppers sliced (use a mix of colors for more vibrance)
  • 1 cup snap peas
  • 1 cup carrots julienned
  • 1 cup baby corn sliced
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced
  • 1/4 cup soy sauce (choose low-sodium for a lighter option)
  • 2 tablespoons sesame oil
  • 1 tablespoon green onions chopped
  • 1 tablespoon sesame seeds

Instructions

Step 1: Cook the Whole Wheat Noodles

  • Bring a large pot of salted water to a boil. Add the whole wheat noodles and cook according to the package instructions until al dente, usually around 7-9 minutes. Drain and rinse under cold water to stop the cooking process and set aside.

Step 2: Prepare the Vegetables

  • While the noodles are cooking, wash and slice the bell peppers, julienne the carrots, and slice the baby corn. Mince the garlic and ginger finely for that punch of flavor.

Step 3: Stir-Fry the Veggies

  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and ginger and sauté for about 30 seconds until fragrant. Toss in the broccoli florets, bell peppers, snap peas, carrots, and baby corn. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.

Step 4: Combine Noodles and Sauce

  • Add the cooked noodles to the skillet with the vegetables. Pour in the soy sauce and drizzle the sesame oil over the mixture. Toss everything together thoroughly to ensure the noodles and veggies are evenly coated and warmed through.

Step 5: Garnish and Serve

  • Transfer the stir-fry to serving plates or a large bowl. Sprinkle with chopped green onions and toasted sesame seeds for a nutty crunch. Serve immediately, and enjoy the burst of textures and flavors in every bite.

Equipment

  • Large Pot
  • Large Skillet
  • Wok

Notes

  • Use a hot wok or large skillet to get a perfect sear on your veggies and noodles.
  • Add red pepper flakes or chili garlic sauce for a spicy kick.
  • Stir-fry in batches if needed to avoid overcrowding and keep vegetables crisp.
  • Rinse cooked noodles after boiling to prevent sticking.
  • For extra protein, add cooked tofu or chickpeas.
