Step 1: Prepare the Chicken - Start by placing the 2 pounds of boneless, skinless chicken breasts in the bottom of your slow cooker. Make sure to spread them out evenly.
Step 2: Add Salsa and Balsamic Vinegar - Pour the entire jar of chunky salsa over the chicken, followed by the 1/2 cup of balsamic vinegar. If you’re using garlic, sprinkle the minced garlic on top as well.
Step 3: Season to Taste - If desired, add salt to taste. Remember that the salsa may already contain some sodium, so adjust accordingly.
Step 4: Set the Slow Cooker - Cover the slow cooker and set it to cook on low for 6-7 hours or high for 3-4 hours. The chicken is done when it is fully cooked and shreds easily with a fork.
Step 5: Shred and Serve - Once cooked, use two forks to shred the chicken inside the slow cooker, mixing it with the sauce. Serve it warm over rice, in a sandwich, or with your favorite sides.
