Ingredients

  • 1 can refried beans 16-ounce can or 2 cups homemade
  • 2 cups salsa
  • 1 teaspoon sea salt
  • 2 ripe avocados
  • 1 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 16 ounces sour cream
  • 1 packet taco seasoning 1-ounce or 3 tablespoons homemade
  • 1 cup grated sharp cheddar cheese
  • 1 bunch scallions chopped
  • 1 can sliced black olives 2.25-ounce, drained (optional)
  • Tortilla chips for serving

Instructions

  • In a mixing bowl, combine the refried beans with sea salt. If you're using homemade refried beans, ensure they are creamy and smooth.
  • In another bowl, mash the avocados and mix in the lime juice, finely chopped jalapeño, and half of the chopped cilantro. Season with salt to taste.
  • In a separate bowl, combine the sour cream and taco seasoning until well mixed.
  • In a serving dish, start layering your ingredients: First, spread the seasoned refried beans on the bottom, then add a layer of salsa, followed by guacamole, and then the sour cream mixture.
  • Sprinkle the grated cheddar cheese over the sour cream layer. Add diced Roma tomatoes, sliced jalapeños, and chopped scallions. Finish with cilantro and optional black olives.
  • Cover the dip with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve with tortilla chips for dipping.
