Ingredients

  • 2 large carrots peeled and sliced on an angle into 1 1/2-2 inch long slices
  • 2 tablespoons olive oil
  • 1/2 tablespoon low-sodium soy sauce or coconut aminos
  • 1/3 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • to taste Salt
  • to taste black pepper
  • 1-2 tablespoons grated parmesan cheese or vegan parmesan cheese
  • 2-3 fresh basil leaves chopped
  • Chopped pistachios for garnish

Instructions

  • Start by peeling the carrots and slicing them on an angle into 1 1/2 to 2-inch long pieces. This not only makes for a beautiful presentation but also helps them cook evenly.
  • In a mixing bowl, combine the sliced carrots with olive oil, low-sodium soy sauce (or coconut aminos), garlic powder, smoked paprika, salt, and black pepper. Toss the carrots until they are well-coated with the seasoning mixture.
  • Preheat your air fryer to 400°F (200°C). Place the seasoned carrots in the air fryer basket in a single layer. Depending on the size of your air fryer, you may need to do this in batches. Air fry the carrots for about 12-15 minutes, shaking the basket halfway through to ensure even cooking.
  • Once the carrots are tender and slightly crispy, remove them from the air fryer. Sprinkle with grated parmesan cheese or vegan parmesan, and toss in the chopped fresh basil and pistachios for added flavor and crunch.
