Preheat your air fryer to 380°F (190°C). Once preheated, place the chicken thighs in the basket and cook for about 18-20 minutes, flipping halfway through.
Once cooked, remove the chicken from the air fryer, let it rest, and slice into strips. On each tortilla, layer spinach, red onion, cheese, and chicken, then wrap tightly.
For extra crispiness, return the assembled wraps to the air fryer at 350°F (175°C) for 3-5 minutes.
