In another bowl, pour the melted butter over the bite-sized chicken pieces. Toss to coat each piece thoroughly.
Take each butter-coated chicken piece and dip it into the breadcrumb mixture. Press down gently to ensure the breadcrumbs adhere well. Place the coated nuggets on a baking sheet.
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Spray the air fryer basket with olive oil cooking spray or mist with olive oil. Arrange the chicken nuggets in a single layer in the basket.
Air fry the nuggets for about 10-12 minutes, flipping them halfway through.
While the nuggets are cooking, mix together the honey, yellow mustard, and dijon mustard in a small bowl.
