Ingredients

  • 1 cup cooked lomein noodles
  • 1 cup shredded cabbage
  • 1/2 cup grated carrots
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 package spring roll wrappers
  • 1 cup cooked shredded chicken
  • cooking spray

Instructions

Prepare the Filling

  • In a large mixing bowl, combine the cooked lomein noodles, shredded cabbage, grated carrots, diced bell peppers, chopped green onions, cooked shredded chicken, soy sauce, garlic powder, and ginger powder. Mix everything together until well combined.

Assemble the Spring Rolls

  • Lay out a spring roll wrapper on a clean surface, with one corner facing you. Place about 2-3 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly to seal. Seal the edges by applying a little water to the wrapper. Repeat until all filling is used.

Air Fry the Spring Rolls

  • Preheat your air fryer to 380°F (193°C). Spray the basket with cooking spray to prevent sticking. Place the spring rolls in the basket without touching each other. Spray tops lightly with cooking spray. Air fry for 10-12 minutes, or until golden brown and crispy. Work in batches if needed.
