Air Fryer Egg Salad

Ingredients

  • 8 large eggs
  • 4 tablespoons mayonnaise your favorite brand or homemade
  • 1 tablespoon finely chopped chives or scallions
  • 1/4 teaspoon kosher salt adjust to taste
  • to taste fresh black pepper
  • 1/8 teaspoon sweet paprika for garnish

Instructions

  • Preheat your air fryer to 270°F (130°C). Arrange the eggs in the air fryer basket in a single layer. Cook for 15-17 minutes. Transfer the eggs to an ice bath to stop the cooking process.
  • Once the eggs are cool, peel them and place them in a mixing bowl. Use a fork to mash the eggs to your preferred consistency. Add in the mayonnaise, chopped chives or scallions, kosher salt, and black pepper. Mix until well combined.
  • Transfer the egg salad to a serving bowl. Garnish with sweet paprika and extra chives or scallions. Serve on its own, in a sandwich, or on a bed of greens.
