Start by washing and peeling your russet potatoes. Slice them into thin strips, about 1/4 inch thick.
Soak the sliced potatoes in cold water for at least 30 minutes to remove excess starch.
After soaking, drain the water and pat the potato slices dry. Transfer them to a mixing bowl, drizzle with olive oil, and sprinkle salt, onion powder, garlic powder, paprika, pepper, dried parsley, and dried oregano. Toss until evenly coated.
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Place the seasoned potato slices in the air fryer basket in a single layer, avoiding overcrowding.
Cook the fries for 15-20 minutes, shaking the basket halfway through, until golden brown and crispy.
Once cooked, remove the fries from the air fryer and let them cool for a minute. Serve hot with your favorite dipping sauce.
