Ingredients

  • 1 large bell pepper (red or yellow, cut into 1 1/2-inch pieces)
  • 1 medium zucchini (sliced into 1/4-inch rounds)
  • 1 cup broccoli florets (cut into bite-sized pieces)
  • 1 cup cauliflower florets (cut into bite-sized pieces)
  • 1 cup cherry tomatoes (halved)
  • 1/2 large red onion (cut into 1-inch pieces and layers separated)
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper

Instructions

  • Start by washing all your vegetables thoroughly. Cut the bell pepper into 1 1/2-inch pieces, slice the zucchini into 1/4-inch rounds, and separate the broccoli and cauliflower florets into bite-sized pieces. Halve the cherry tomatoes and cut the red onion into 1-inch pieces, ensuring the layers remain separated.
  • In a large mixing bowl, combine all the prepared vegetables. Drizzle with 2 tablespoons of extra virgin olive oil, then sprinkle with garlic powder, sea salt, and freshly ground black pepper. Toss everything together until the veggies are evenly coated.
  • Preheat your air fryer to 400°F (200°C) for about 5 minutes. This ensures that your vegetables start cooking immediately when placed inside.
  • Carefully place the seasoned vegetables in the air fryer basket. Make sure they are spread out evenly for optimal air circulation. If necessary, work in batches to avoid overcrowding.
