Ingredients

  • 2 cups ground almonds or almond meal (250g) or super-fine almond flour (225g)
  • 2 large eggs
  • 5 tablespoons melted butter (70g)
  • 1 teaspoon baking powder
  • Salt (optional)

  • Step 1: Preheat Your Oven
    Preheat your oven to 350°F (175°C). This ensures your biscuits bake evenly.
  • Step 2: Prepare Your Baking Sheet
    Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  • Step 3: Mix Dry Ingredients
    In a mixing bowl, combine the almond flour, baking powder, and salt (if using). Whisk together until well combined.
  • Step 4: Combine Wet Ingredients
    In another bowl, beat the two large eggs. Add the melted butter and mix until smooth.
  • Step 5: Combine Wet and Dry Mixtures
    Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined; do not overmix.
  • Step 6: Shape the Biscuits
    Using a spatula or your hands, scoop out portions of the dough and shape them into round biscuits, about 1 inch thick. Place them on the prepared baking sheet, leaving space between each one.
  • Step 7: Bake
    Bake in the preheated oven for 12-15 minutes, or until the biscuits are lightly golden around the edges.
  • Step 8: Cool and Serve
