Ingredients

  • 3 tablespoons pure maple syrup
  • 1 large egg

  • 1/4 teaspoon fine-grain sea salt

Instructions

  • Step 1: Preheat Your Oven - Begin by preheating your oven to 350°F (175°C). This ensures that your cookies bake evenly and achieve that perfect golden-brown finish.
  • Step 2: Prepare Your Baking Sheet - Line a baking sheet with parchment paper. This will help your cookies bake without sticking and make clean-up a breeze.
  • Step 3: Mix the Wet Ingredients - In a mixing bowl, combine 2 tablespoons of solid coconut oil and 3 tablespoons of pure maple syrup. Use a whisk or fork to mix until well combined. Next, add in the large egg and 1 teaspoon of pure vanilla extract, mixing until fully incorporated.
  • Step 4: Combine the Dry Ingredients - In a separate bowl, mix together 2 cups of almond flour, 1/2 teaspoon of baking soda, and 1/4 teaspoon of fine-grain sea salt. Stir until evenly distributed.
  • Step 5: Combine Wet and Dry Ingredients - Gradually add the dry mixture to the wet ingredients, stirring until a dough forms. Be careful not to overmix; just combine until everything is nicely blended.
  • Step 6: Add the Chocolate Chips - Fold in 1/2 cup of mini semi-sweet chocolate chips into the cookie dough. If you're a chocolate lover, feel free to add more for topping!
  • Step 7: Scoop the Dough - Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet. Leave some space between each cookie, as they will spread slightly while baking.
