Ingredients

For the Cookies:

  • 1 cup No-Stir Natural Peanut Butter high-quality, only peanuts and salt
  • 1 ¼ cups Coconut Sugar packed
  • 1 large Egg
  • 1 Egg Yolk
  • 1 teaspoon Vanilla Extract
  • ¾ cup Almond Flour
  • ¾ teaspoon Baking Soda
  • ½ teaspoon Salt

Instructions

Method:

  • Step 1: Preheat the oven to 350°F (175°C) for even baking.
  • Step 2: Line a baking sheet with parchment paper to prevent sticking.
  • Step 3: In a medium mixing bowl, combine peanut butter, coconut sugar, egg, egg yolk, and vanilla extract. Whisk until smooth and creamy.
  • Step 4: Add almond flour, baking soda, and salt to the wet mixture. Stir until just combined.
  • Step 5: Scoop dough onto the prepared baking sheet, leaving space between each cookie.
  • Step 6: Bake for 10-12 minutes until edges are golden and centers look soft.
  • Step 7: Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
