Ingredients

  • 3/4 cup unsalted butter softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 13.4 oz instant coconut cream pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 2 1/4 cups all-purpose flour
  • 18 mini Almond Joy candy bars chopped

Instructions

  • Preheat your oven to 350°F (175°C).
  • Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each, then stir in the vanilla extract.
  • Whisk together the pudding mix, baking soda, and flour in a separate bowl, then mix into the wet ingredients until just combined.
  • Fold in the chopped mini Almond Joy bars.
  • Scoop rounded balls of dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until edges are golden brown.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack.
