Ingredients

For the Dish:

  • 1/4 cup sesame or olive oil
  • 2 tablespoons butter
  • 1/3 cup green onions, sliced
  • 1-3 tablespoons Thai red curry paste
  • 3-4 cloves garlic, chopped
  • 1 shallot, chopped
  • 1 pound lean ground beef
  • 1 egg
  • 1-2 bell peppers, thinly sliced
  • 1 cup chopped broccoli florets
  • chili flakes (to taste)
  • 1/2 cup chopped fresh Thai or regular basil
  • 4 squares ramen noodles, egg noodles, or rice noodles (6 ounces)
  • 1/3 cup tamari or soy sauce
  • 1 teaspoon honey

Instructions

Cooking Steps:

  • In a large skillet or wok, heat the sesame or olive oil over medium-high heat. Once hot, add the butter and let it melt.
  • Add the green onions, chopped garlic, and shallot to the skillet. Sauté for about 2-3 minutes, or until fragrant.
  • Increase the heat to high and add the lean ground beef. Cook until browned, about 5-7 minutes.
  • Stir in the bell peppers and broccoli florets. Sauté for another 4-5 minutes until the vegetables are tender yet crisp.
  • Add the Thai red curry paste and chili flakes. Mix well to combine the flavors.
  • While the beef and vegetables are cooking, prepare your noodles according to package instructions. Drain and set aside.
  • In a small bowl, whisk together the tamari or soy sauce and honey. Pour this sauce over the beef and vegetable mixture.
  • Add the cooked noodles to the skillet and toss everything together.
  • Remove the skillet from heat and stir in the chopped Thai or regular basil.
  • Serve hot, garnished with additional green onions or basil if desired. Enjoy!
