Ingredients

Instructions

Stepwise Method:

  • Start by preheating your oven to 350°F (175°C). Line your baking sheets with parchment paper to ensure your cookies come off easily after baking.
  • In a large mixing bowl, cream together the cubed unsalted butter, sugar, and brown sugar using a stand mixer or hand mixer until light and fluffy. This should take about 2-3 minutes.
  • Next, add the chopped hard-boiled eggs and vanilla extract to the butter mixture. Mix until well combined. The texture may look a bit different than traditional cookie dough, but that’s okay!
  • In a separate bowl, whisk together the all-purpose flour, salt, and baking soda. Gradually add this mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
