Ingredients

  • 2 whole eggs beaten

  • 1 tbsp mustard your choice of yellow, Dijon, or whole grain

Instructions

  • Start by cutting the chicken breast into strips, about 1 to 1.5 inches wide. This size ensures they cook evenly and remain tender.
  • In a mixing bowl, beat the eggs until smooth. Add the tablespoon of mustard and whisk until well combined. This mixture will be the flavorful coating for your chicken.
  • Place flour in a shallow dish. Season with salt and pepper to taste. Dredge each chicken strip in the flour, ensuring it is well-coated, and shake off any excess.
  • Next, dip each floured chicken strip into the egg and mustard mixture, allowing any excess to drip off. This step is essential for the crispy texture!
  • In a frying pan, heat about a half-inch of vegetable oil over medium heat. Once hot, carefully add the chicken tenders in batches, ensuring not to overcrowd the pan. Fry until golden brown, about 3-4 minutes on each side.
