Ingredients

  • 4 cups fresh spinach leaves thoroughly washed and dried
  • 1 large apple cored and thinly sliced (choose a crisp variety like Honeycrisp or Fuji)
  • 1/2 cup walnuts toasted to bring out their rich flavor
  • 1/4 cup feta cheese crumbled (choose a creamy, crumbly variety)
  • 1/4 cup dried cranberries for a sweet-tart contrast
  • 1/4 cup olive oil extra virgin for the best flavor
  • 2 tablespoons apple cider vinegar to add bright acidity
  • 1 tablespoon honey for natural sweetness
  • salt and pepper to taste

Instructions

  • Preheat your oven to 350°F (175°C). Spread the walnuts on a baking sheet in a single layer and toast them for about 8-10 minutes, stirring halfway through. Keep a close eye to avoid burning.
  • In a small bowl or jar, combine the olive oil, apple cider vinegar, honey, salt, and pepper. Whisk or shake vigorously until the dressing emulsifies into a smooth, golden mixture. Adjust seasoning as needed.
  • Core the apple and slice it thinly to ensure every bite includes a crisp, juicy element.
  • In a large mixing bowl, add the fresh spinach leaves, sliced apple, toasted walnuts, dried cranberries, and crumbled feta cheese. Drizzle the dressing over the salad and toss gently but thoroughly to coat every ingredient.
  • Transfer the salad to a serving bowl or plate and enjoy immediately for the freshest flavors and textures.

Equipment

  • Large Mixing Bowl
  • Sharp Knife
  • Cutting Board
  • Small Bowl or Jar
  • Baking sheet or skillet
  • Measuring spoons and cups

Notes

  • Toast walnuts carefully to avoid burning and bitterness.
  • Slice apples just before assembling to prevent browning; toss slices with lemon juice if prepping early.
  • Store leftovers in an airtight container in the fridge up to 24 hours; keep dressing separate to maintain crispness.
  • For a dairy-free version, omit feta or substitute with a nut-based cheese or avocado slices.
  • Swap walnuts for almonds or pecans for different textures and flavors.
