Ingredients

For the Bruschetta:

  • 1 jar marinated artichoke hearts 6 1/2 ounce, drained and chopped
  • 1 medium tomato seeds removed and diced
  • 1/2 cup grated Romano cheese or Parmesan cheese
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic crushed
  • 5 tablespoons mayonnaise
  • 1 French baguette cut into 1/3 inch thick slices

Instructions

Method:

  • Step 1: Gather all ingredients. Drain and chop artichoke hearts, dice tomato, chop onion, and crush garlic.
  • Step 2: In a mixing bowl, combine artichokes, tomato, cheese, onion, garlic, and mayonnaise. Mix until well combined.
  • Step 3: Preheat oven to 400°F (200°C). Slice baguette and arrange on a baking sheet.
  • Step 4: Toast baguette slices in the oven for 5-7 minutes until golden brown and crispy.
  • Step 5: Spoon artichoke mixture onto toasted baguette slices. Serve immediately.
