Ingredients

  • 1 packet Lipton or Knorr's Vegetable Recipe Mix
  • 16 ounces sour cream low-fat
  • 1 cup mayonnaise
  • 10 ounces baby spinach chopped or frozen, thawed and squeezed dry
  • 8 ounces water chestnuts drained and chopped (1 can)
  • 2 pieces green onions chopped (optional)

Instructions

Instructions

  • Step 1: Prepare the Spinach - If you're using fresh baby spinach, wash it thoroughly and chop it into smaller pieces. If you're using frozen spinach, make sure it's thawed completely and squeeze out any excess water.
  • Step 2: Mix the Base - In a large mixing bowl, combine the sour cream and mayonnaise. Stir until the mixture is smooth and well combined.
  • Step 3: Add the Flavor - Sprinkle in the packet of Lipton or Knorr's Vegetable Recipe Mix. Mix well to incorporate the seasoning throughout the creamy base.
  • Step 4: Combine the Ingredients - Add the chopped spinach, water chestnuts, and green onions (if using) to the bowl. Gently fold the ingredients together until everything is evenly distributed.
  • Step 5: Chill and Serve - Cover the bowl with plastic wrap and refrigerate the spinach dip for at least an hour before serving.

Notes

  • Make sure to squeeze out excess moisture from the spinach to prevent a watery dip.
  • This dip can be made ahead of time and stored in the fridge for up to 3 days.
  • For a vegan version, use plant-based alternatives for sour cream and mayonnaise.
