Baby Bok Choy with Shrimp

Ingredients

  • 4 oz baby bok choy cleaned and rinsed
  • 1/8 teaspoon salt or to taste
  • 1 tablespoon oil (canola or sesame oil work well)
  • 1/4 cup baby shrimp peeled
  • 3 cloves garlic finely chopped

Instructions

  • Start by cleaning and rinsing the baby bok choy thoroughly. Cut it in half lengthwise if it’s larger, so it cooks evenly. Chop the garlic finely and set aside. Make sure your shrimp are peeled and ready to go.
  • In a wok or large skillet, heat 1 tablespoon of oil over medium-high heat. You want the oil to be hot enough that it shimmers but not smoking.
  • Once the oil is hot, add the finely chopped garlic. Sauté for about 30 seconds until fragrant, making sure not to burn it.
  • Add the baby shrimp to the skillet. Stir-fry for about 2-3 minutes until the shrimp turn pink and are cooked through.
  • Next, add the cleaned bok choy to the skillet. Sprinkle with salt and stir-fry for an additional 2-3 minutes until the bok choy is tender but still maintains a slight crunch.
  • Once the bok choy is cooked to your liking, remove the skillet from heat. Plate the Baby Bok Choy with Shrimp and enjoy it warm.
