Add the cauliflower florets into the batter and toss until each piece is fully coated.
Place the coated florets on the prepared baking sheet in a single layer. Bake for 20 minutes, flipping halfway through.
While baking, combine the buffalo sauce and olive oil in a large bowl.
Once baked and crispy, toss the cauliflower bites immediately in the buffalo sauce mixture.
Return the sauced cauliflower to the baking sheet and bake for an additional 10 minutes to crisp up the sauce.
Remove from oven, garnish with freshly chopped parsley, and serve warm.
