  • 3 medium scallions green part only, chopped
  • 2 oz shredded low fat sharp cheddar (I used Cabot 50%)
  • 4 oz shredded chicken
  • 1/4 cup Frank's Hot Sauce or any buffalo wing sauce
  • 1/2 cup egg whites beaten
  • 3/4 cup panko crumbs or gluten-free panko
  • 1/8 tsp paprika
  • 1/8 tsp garlic powder
  • 1/8 tsp chili powder
  • Pinch salt
  • Pinch pepper
  • 1 can Cooking spray

  • Step 1: Preheat the Oven. Start by preheating your oven to 375°F (190°C).
  • Step 2: Prepare the Jalapeños. Slice the jalapeño peppers in half lengthwise and remove the seeds.
  • Step 3: Make the Filling. In a mixing bowl, combine cream cheese, scallions, cheddar, chicken, and hot sauce.
  • Step 4: Season the Filling. Add the beaten egg whites, paprika, garlic powder, chili powder, salt, and pepper.
  • Step 5: Fill the Jalapeños. Fill each jalapeño half with the buffalo chicken mixture.
  • Step 6: Coat with Panko. Sprinkle panko crumbs over each popper for crunch.
  • Step 7: Bake. Lightly spray with cooking spray and bake for 20-25 minutes.
  • Step 8: Serve and Enjoy! Let cool slightly and serve warm.
