Ingredients

  • 1 tablespoon baking powder (NOT baking soda)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 2 cups Buffalo sauce (homemade or store-bought)

  • Step 1: Preheat your oven to 425°F (220°C). This high temperature is key to achieving that crispy texture we all love.
  • Step 2: Rinse the chicken wings under cold water and pat them dry with paper towels. The dryer they are, the crispier they will get in the oven.
  • Step 3: In a large mixing bowl, combine the baking powder, salt, pepper, garlic powder, onion powder, and smoked paprika. Toss the wings in this mixture until they are well coated.
  • Step 4: Place a wire rack on top of the baking sheet and arrange the wings in a single layer on the rack. This setup allows for airflow and helps the wings cook evenly.
  • Step 5: Bake the wings in the preheated oven for about 40-45 minutes, flipping halfway through. Keep an eye on them—they should be golden brown and crispy when done.
  • Step 6: Once the wings are cooked, remove them from the oven and place them in a clean bowl. Pour the Buffalo sauce over the wings and toss until they are well coated.
  • Step 7: For an extra layer of crispiness, return the sauced wings to the oven for an additional 5-10 minutes. This will help set the sauce and create an even more delicious finish.
