Ingredients

For the Marinade:

  • 4 lbs chicken legs or drumsticks (14 count)
  • 1/4 cup light olive oil (not extra virgin)
  • 4 cloves garlic (pressed or minced)
  • 4 tablespoons fresh parsley (finely chopped)
  • 3 tablespoons lemon juice (from 1 large lemon)
  • 2 tablespoons Dijon mustard
  • 2 teaspoons fine sea salt
  • 1/2 teaspoon black pepper

  • Step 1: Prepare the Marinade. In a large mixing bowl, combine the light olive oil, minced garlic, chopped parsley, lemon juice, Dijon mustard, sea salt, and black pepper. Whisk everything together until well combined.
  • Step 2: Marinate the Chicken. Place the chicken legs in a large plastic bag or bowl, pour the marinade over, and ensure each piece is well coated. Seal tightly or cover and refrigerate for at least 1 hour, ideally 4 to 6 hours.
  • Step 3: Preheat the Oven. Preheat your oven to 400°F (200°C).
  • Step 4: Arrange the Chicken. Line a baking sheet with parchment paper and arrange the chicken legs on it, ensuring they are not overcrowded.
  • Step 5: Bake the Chicken. Bake for about 35 to 45 minutes or until the internal temperature reaches 165°F (75°C). Broil for the last 2 to 3 minutes for extra crispiness.
