Ingredients

For the Chicken:

  • 2 pieces boneless, skinless chicken breasts halved horizontally
  • Salt to taste
  • Ground black pepper to taste
  • 1/2 cup whole-wheat panko bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 2 Tbsp flaxseed meal
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 2 pieces egg whites
  • 1 tsp water
  • 2 1/2 cups favorite marinara sauce or this recipe
  • 2 medium zucchini spiralized
  • 1/2 cup shredded mozzarella cheese
  • 2 Tbsp fresh basil leaves chopped
  • Cooking spray

  • Step 1: Preheat your oven to 400°F (200°C). This ensures that your chicken will bake perfectly and achieve that golden-brown crust.
  • Step 2: Season the halved chicken breasts with salt and ground black pepper on both sides.
  • Step 3: In a medium mixing bowl, combine the whole-wheat panko bread crumbs, grated Parmesan cheese, flaxseed meal, dried oregano, and garlic powder.
  • Step 4: In another bowl, whisk together the egg whites and water until well blended.
  • Step 5: Dip each piece of chicken into the egg wash, allowing any excess to drip off. Then, roll it in the panko mixture and place on the baking sheet.
  • Step 6: Spray the chicken lightly with cooking spray and bake for about 20-25 minutes, or until cooked through and golden brown.
  • Step 7: While the chicken bakes, spiralize the zucchini into noodles.
  • Step 8: In a saucepan over medium heat, warm your favorite marinara sauce.
  • Step 9: Once chicken is done, top with warm marinara sauce and shredded mozzarella cheese. Return to the oven for an additional 5 minutes.
