Ingredients

  • 1 whole chicken (about 5 pounds)
  • 1/4 cup olive oil (or avocado oil)
  • 3 limes Juice
  • 1/4 cup fresh cilantro (chopped finely)
  • 4 cloves garlic (minced)
  • 1 tablespoon honey
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional lime wedges (for serving)

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, combine olive oil, lime juice, cilantro, garlic, honey, cumin, paprika, salt, and pepper. Whisk until well blended.
  • Place the chicken in a roasting pan and apply the marinade all over, ensuring it’s well coated.
  • Let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  • Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  • Remove from oven and let it rest for 10-15 minutes before carving.
