Ingredients

  • 2 cups shredded cooked chicken
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced green onions
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 8 small flour tortillas
  • 1/2 cup salsa
  • cooking spray or olive oil

Instructions

Prepare the Filling

  • In a large mixing bowl, combine the shredded cooked chicken, softened cream cheese, shredded cheddar cheese, diced green onions, garlic powder, onion powder, and cumin. Mix everything thoroughly until well combined and creamy.

Warm the Tortillas

  • Warm the tortillas slightly to make rolling easier and prevent cracking by placing them in the microwave for 15-20 seconds or warming individually in a dry skillet for 10-15 seconds on each side.

Fill and Roll the Taquitos

  • Lay one tortilla flat on a clean surface. Spoon about 2-3 tablespoons of the filling onto the lower third of the tortilla. Spread evenly, then roll tightly around the filling. Place seam-side down on a baking sheet lined with parchment paper or lightly greased.

Prepare for Baking

  • Lightly spray the taquitos with cooking spray or brush with olive oil. Optionally sprinkle a pinch of cumin or chili powder on top before baking.

Bake the Taquitos

  • Preheat oven to 425°F (220°C). Bake taquitos for 15-20 minutes, flipping halfway through, until golden brown and crispy. Watch closely at the end to avoid burning.

Serve

  • Remove from oven and let cool for a few minutes. Serve warm with salsa, guacamole, or sour cream. They also pair well with a fresh side salad or Mexican rice.
