Baked Honey Brie

  • 8 oz.brie cheese round
  • 1 cupshelled Pistachiosleft whole or crushed
  • 2 tbsphoney
  • 1/2 tspdried thyme

  • Preheat oven to 350°F and position a rack in the center.
  • Drizzle 1 tablespoon olive oil into the bottom of an oven-safe skillet or small baking dish and spread to coat the surface. Place the 8 oz brie round in the center.
  • Using a sharp knife, score the top of the brie with shallow cuts (a crosshatch or several radial cuts), about 1/8–1/4 inch deep.
  • Sprinkle 1 cup shelled pistachios (whole or crushed) over the scored top. Drizzle the remaining 1 tablespoon olive oil and 2 tablespoons honey evenly over the pistachios and cheese. Sprinkle 1/2 teaspoon dried thyme on top.
  • Bake for 7–10 minutes, checking at 7 minutes. The brie is done when it is softened and beginning to ooze but still holds its round shape.
  • Remove from the oven and let sit 1–2 minutes. Sprinkle with red pepper flakes if using, and serve warm with crusty bread for dipping.

What other toppings work well for brie?
Try raspberries and maple syrup for a sweet variation or caramelized onions for something more a more savory pallet.
What to serve Brie with?
I served this with crusty bread (like Italian or Baguette Slices); I’d go that route if you want to dip into it, otherwise, using a knife with crackers would be good, too.
Brie can also be served with fresh fruit like pear slices or apple slices if you want to give a non-bread option for Holiday Parties.
